1️⃣ Dissolve the Cornstarch
In a bowl, whisk together ½ cup coconut milk with the cornstarch until completely smooth. Set aside—this prevents lumps and ensures a silky finish.
2️⃣ Heat the Coconut Base
In a medium saucepan over medium heat, combine the remaining coconut milk, sugar, salt, and cinnamon stick. Stir gently and bring just to a simmer—do not boil.
3️⃣ Thicken the Tembleque
Slowly whisk the cornstarch mixture into the saucepan. Reduce heat to medium-low and stir constantly for 5–8 minutes, until thick and glossy. You’ll know it’s ready when it coats the back of a spoon.
Remove from heat and discard the cinnamon stick. Stir in vanilla extract.
4️⃣ Mold & Chill
Pour the mixture into individual ramekins or a lightly greased mold. Smooth the top and let cool at room temperature for about 15 minutes.
Refrigerate for at least 2 hours, or until fully set.

To unmold, run a knife around the edge and invert onto a plate—or serve directly in the dish. Sprinkle generously with ground cinnamon and coconut before serving.
