🛒 Ingredients
Caramel
- 1 cup granulated sugar
- ¼ cup water
Flan Custard
- 1 can (13.5 oz) coconut milk
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 4 large eggs
- 2 large egg yolks
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ cup finely shredded coconut (optional, traditional)
👩🍳 Instructions
1️⃣ Make the Caramel
In a small saucepan over medium heat, combine sugar and water. Cook without stirring until the mixture turns a deep amber color, swirling the pan gently if needed.
Immediately pour the caramel into a flan mold or round baking dish, tilting to coat the bottom evenly. Set aside to harden.
2️⃣ Prepare the Custard
In a blender, combine coconut milk, evaporated milk, condensed milk, eggs, egg yolks, vanilla, and salt. Blend until smooth and fully incorporated.
If using shredded coconut, stir it in by hand for added texture.
3️⃣ Assemble
Pour the custard mixture carefully over the hardened caramel.
Place the flan mold inside a larger baking dish. Fill the outer dish with hot water halfway up the sides of the flan mold to create a water bath (baño María).
4️⃣ Bake
Preheat oven to 350°F (175°C). Bake for 50–60 minutes, or until the flan is set around the edges but slightly jiggly in the center.
Remove from the water bath and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
5️⃣ Unmold & Serve
Run a knife around the edges. Invert onto a serving plate and let the caramel cascade over the flan.
Slice and serve chilled.
